Description

Butternut squash has an elongated, pear-like shape with smooth, beige skin and intensely orange, moist flesh that has a sweet-nutty flavor and creamy texture when roasted. It is easy to cut after being heated or halved, and its seeds can be roasted. As a source of beta-carotene (vitamin A), vitamin C, fiber, potassium, and antioxidants, butternut squash supports immunity, eye health, skin, and digestion, while being low in calories. In the kitchen, it works well roasted, in puree, soups, risottos, gnocchi, curries, casseroles, or desserts, and pairs nicely with herbs (sage, thyme), butter, maple syrup, nuts, and cheese. Store the whole squash in a dry, cool, and dark place for 1–3 months; after cutting, wrap it in plastic and keep it in the fridge for 4–5 days. Cooked or blended portions can be frozen for several months.
