Rice vinegar is usually light straw-colored, delicate, and slightly sweet, while apple cider vinegar has a golden color, a more pronounced fruity aroma, and a sharper acidity; both add freshness to dishes but differ in intensity. In the kitchen, rice vinegar is perfect for sushi, dressings, marinades, and light sauces, while apple cider vinegar works well in vinaigrettes, marinades, pickling vegetables, and as an ingredient in glazes or deglazing. Nutritionally, both are low-calorie and provide acetic acid, which may support digestion and blood sugar regulation when used in moderation; some unfiltered apple cider vinegars contain "the mother," beneficial for gut flora.
