White rice
Description
White rice has a neutral, slightly sweet flavor and small, pearl-white grains with a soft, sticky or fluffy texture depending on the variety. It is a source of easily digestible carbohydrates, providing energy, small amounts of protein, and almost no fat; it is naturally gluten-free. Compared to brown rice, it contains less fiber and some vitamins and minerals may be present in smaller amounts, so it is worth pairing it with vegetables and protein to supplement micronutrients. In the kitchen, white rice is versatile: it works well as a side dish, an ingredient in risotto, sushi, pilaf, or sweet puddings. It complements Asian and Mediterranean dishes and serves as a base for salads. Store dry rice in an airtight container in a cool, dry place away from light and moisture; it has a long shelf life. Cooked rice can be stored in the refrigerator for a maximum of 1–2 days or frozen to extend freshness.
