Description
Spicy broad bean paste (doubanjiang) is a jarred, fermented paste with a deep red-brown color, featuring noticeable bits of broad beans and chili peppers. Its flavor combines intense umami with a salty note and a distinct, peppery spicy finish; the aroma is complex, slightly fermented and earthy, with a spicy chili kick. Nutritionally, doubanjiang provides plant protein, fiber, and minerals such as iron and potassium, and the fermentation process may support gut microbiota and enhance nutrient absorption. It also contains capsaicin, which has anti-inflammatory properties, but it is usually high in salt and sometimes fat, so it is advisable to use it in moderation. The paste pairs well with Sichuan dishes (e.g., mapo tofu), stir-fries, marinades, sauces, soups, and dips. It should be stored in a cool place before opening; after opening, keep it in the refrigerator in an airtight jar, use a clean spoon, and maintain a layer of oil on the surface to prolong freshness.
