Rosemary sprigs
Description
Rosemary sprigs have stiff, needle-like leaves of intense green color and a characteristic resinous, slightly camphoraceous aroma with citrusy-spicy notes. They have an aromatic and pronounced flavor, adding depth and freshness to dishes; they present decoratively on roasted meats, potatoes, focaccia, as well as in marinades, sauces, and flavored oils. They pair wonderfully with lamb, poultry, fish, root vegetables, and Mediterranean dishes, as well as in grilled recipes. Rosemary contains essential oils and antioxidant compounds, as well as trace amounts of vitamins and minerals such as B vitamins, vitamin A, iron, and calcium, and has traditionally been used as a digestive aid and anti-inflammatory agent. Store fresh sprigs wrapped in a damp paper towel in the refrigerator for 1–2 weeks or freeze them in a bag or in oil, and keep dried rosemary in an airtight jar in a dark, cool place for several months.
