Black pepper (whole) consists of small, dark brown, wrinkled balls with an intense, peppery aroma and a sharp, slightly woody-citrusy flavor that adds warmth and character to dishes. Its main active compound, piperine, is responsible for the spicy notes and has antioxidant properties as well as supporting digestion; in general, pepper can gently stimulate metabolism, aid in the absorption of certain ingredients (e.g., curcumin), and have anti-inflammatory effects, although it does not replace medical treatment. In the kitchen, black pepper is versatile — it pairs well with meats, soups, sauces, salads, eggs, and marinades, best used freshly ground as a finishing spice. It should be stored in a tightly sealed, opaque container in a cool, dry place away from light and moisture; whole peppercorns retain their aroma longer than ground pepper.
