Raw prosciutto
Description
Prosciutto crudo is an Italian raw-cured ham with thin, translucent slices, a pink-carmine flesh, and delicate marbled fat. The flavor is subtly salty with a hint of sweetness and nutty umami, melting softly in the mouth, making it recognizable in Mediterranean cuisine. It is a good source of high-quality protein, B vitamins (especially B12), iron, and zinc, but it also contains salt and saturated fats, so it should be consumed in moderation. Typical uses include antipasti, pairings with melon, figs, or arugula, toppings for pizza, pasta, sandwiches, and salads, as well as wrapping asparagus or seasoning risotto. Store in the refrigerator wrapped in parchment or plastic wrap, preferably in an airtight container; freshly sliced should be consumed within a few days. Whole pieces can be stored longer, but frequent freezing should be avoided due to loss of texture.
