Shiitake powder
Description
Shiitake powder is a concentrated form of dried shiitake mushrooms with a deep, intense umami flavor featuring earthy and slightly nutty notes; it has a uniform, fine texture and a dark brown color that easily enhances the aroma of dishes. From a nutritional standpoint, it is low in calories and provides plant protein, fiber, B vitamins, and minerals such as potassium, selenium, and zinc, as well as polysaccharides (beta-glucans) that may support immunity and the body's antioxidant activity. In the kitchen, shiitake powder is used as a natural flavor enhancer for broths, sauces, soups, risottos, legume dishes, and marinades for vegetables or meats, pairing well with soy sauce, tahini, and richer ingredients, elevating the depth of flavor. It should be stored in an airtight, dry, and dark container, away from moisture and heat sources; under such conditions, it retains freshness for several months, and for longer periods, it is advisable to use small portions and a desiccant.
