Description
Purchawka is a round, unassuming mushroom with a smooth skin and meaty, uniform texture; young specimens have snow-white, firm flesh and a delicate, slightly nutty flavor that absorbs spices and fats well. Nutritionally, it is low in calories, contains plant protein, fiber, B vitamins, and minerals such as potassium and selenium; it also has antioxidants and, when exposed to light, can provide vitamin D2, which supports immunity and metabolism. In the kitchen, purchawka is great when fried, breaded, stewed in sauces, as an addition to soups, risottos, or casseroles; it pairs well with butter, garlic, herbs, and fatty cheeses. Store it in the refrigerator in a paper bag or loosely wrapped, and it's best to use it within 2–3 days; larger quantities can be lightly dried or blanched and frozen. Always ensure that the inside is white — browning indicates ripeness and it is not suitable for eating.
