Grated horseradish
Description
Grated horseradish is an intensely sharp, pungent root with a distinct, fresh aroma; it has a creamy-white, slightly fibrous texture with fine root hairs that release a strong scent and flavor when grated. It is low in calories, rich in vitamin C and sulfur compounds (glucosinolates, including sinigrin), which exhibit antibacterial properties and support digestion and circulation, contributing to appetite stimulation and respiratory tract cleansing. In the kitchen, grated horseradish pairs perfectly with meat (especially beef, roasts, and cold cuts), fish, eggs, sauces, mayonnaises, and holiday accompaniments, as well as serving as a spicy accent in dressings and marinades. It should be stored in an airtight container in the refrigerator, optionally submerged in vinegar or oil to extend its shelf life; freshly grated horseradish is best used within 1–2 weeks, and it can also be portioned and frozen for longer storage.
