Dried rosemary (optional)
Description
Dried rosemary, used optionally, has an intense, resinous, and slightly piney aroma with a bitter-spicy aftertaste; it resembles dark green, small needles or a matte-finished crumble that easily releases flavor when heated. It is a source of antioxidants and essential oils, providing trace amounts of vitamins (A, C) and minerals such as iron and calcium, and phenolic compounds may support digestion and have anti-inflammatory effects in the context of a diet. In the kitchen, dried rosemary pairs well with meats, game, potatoes, roasted vegetables, soups, and marinades, as well as with oil and bread, where it enhances the aroma of dishes. It is best stored in an airtight, dark, and cool place, away from moisture and light, in small portions to maintain its aroma for several months.
