Now prepare the ginger. Cut off a piece of the root about 2-3 cm long. Using a small teaspoon, scrape off the thin skin from the ginger – this is easier and more economical than peeling with a knife. Then slice the peeled ginger into thin slices.
Cooking mulled wine
In a large pot with a thick bottom (at least 3 liters), place all the prepared ingredients. Pour in the entire apple juice. Add the orange slices, ginger slices, cinnamon sticks, cloves, star anise, and the rinsed sprig of fresh rosemary. Gently stir everything with a large wooden spoon.
Place a pot on the stove over medium heat. Slowly heat the drink, stirring regularly, until it becomes very hot and intense aromas begin to rise from it. It is crucial NOT TO LET the mulled wine come to a boil. When the first small bubbles start to appear on the surface, immediately reduce the burner to the lowest setting.
Cover the pot with a lid and leave it on low heat for about 20-30 minutes. This process, called hot maceration, will allow the flavors and aromas to fully blend. The drink should gently 'simmer,' but not boil. You can stir the contents of the pot occasionally.
After 20-30 minutes, turn off the heat. Using a ladle, carefully taste a bit of the mulled wine (be careful, it's hot!). Assess whether it is sweet enough. If you prefer sweeter drinks, this is the moment to add honey or maple syrup. Add one tablespoon, stir until dissolved, and taste again, adding more if necessary.
Serving
If you are making the adult version, now is the time to add the rum. Pour it into the pot and gently stir. Do not cook the drink after adding the alcohol to prevent it from evaporating. Prepare mugs or glasses made of thick glass.
Using a ladle, pour the hot mulled wine into the prepared mugs. You can strain it through a fine mesh sieve if you prefer a clear drink, or pour it directly from the pot along with the spices and fruits for a more rustic effect. Place a fresh slice of orange in each mug and, if you like, a cinnamon stick from the pot. Serve immediately while it's hot.
