Description

Lactarius deliciosus, commonly known as the saffron milk cap, is a distinctive orange mushroom with a conical cap featuring concentric rings and orange juice (latex) that turns green over time; its flesh is firm, with a slightly nutty flavor and hints of resin and mild spiciness. It is low in calories, rich in plant protein, fiber, and B vitamins, as well as minerals such as potassium, selenium, and copper; it contains antioxidant compounds and polysaccharides beneficial for immunity and metabolism. In the kitchen, saffron milk caps are excellent for frying in butter, stewing with cream, as an addition to potatoes, soups, and sauces, as well as for pickling and preserving; they pair well with onions, dill, thyme, cream, and fatty meats. Store in the refrigerator in a paper bag or breathable container, do not wash before storing, and use within 2–4 days; for longer storage, it is best to blanch and freeze or prepare preserves.
