Wheat flour
Description
Wheat flour is a fine, light powder with a creamy color and a neutral, slightly nutty flavor that does not overpower dishes, but perfectly binds ingredients and provides structure. It is universally used for bread, cakes, cookies, pasta, pancakes, thickened sauces, and breading, checking the appropriate type of flour for a specific bake or dish. Nutritionally, flour is primarily a source of carbohydrates and energy, containing a moderate amount of protein (about 10–13%), little fat, as well as B vitamins and minerals; whole grain flours provide more fiber, iron, and magnesium, which support digestion and a feeling of fullness. Store flour tightly sealed in a dry, cool place away from light; white flours stay fresh for about 6–12 months, whole grain flours for a shorter time, and longer storage can be ensured in the refrigerator or freezer.
