Aged hard cheese (e.g. gruyère, parmesan)
Description
Aged hard cheese, such as Gruyère or Parmesan, has an intense, nutty-umami flavor with a distinct saltiness and a crumbly, grainy texture, along with a golden-straw color. The aroma is concentrated; the longer it ages, the more complex and pronounced it becomes. Nutritionally, it provides concentrated protein, calcium, phosphorus, and vitamins A and B12, supporting bone health, tissue repair, and a feeling of fullness; however, one should consider the content of saturated fats and salt. Aged cheeses often contain little lactose, which may make them easier to tolerate for sensitive individuals. In the kitchen, it is excellent for grating over pasta, risottos, and salads, for casseroles, sauces, fondues, and cheese boards, where it enhances flavors and adds umami. Store in the refrigerator wrapped in parchment paper or an airtight container with some ventilation, avoid plastic wrap directly on the cheese, do not freeze, and only remove small surface mold.
