Cottage cheese
Description
Cottage cheese is a fresh, delicate cheese with a light white color, creamy-crumbly or slightly grainy interior, and a mild, slightly sour taste. Its consistency ranges from very soft to thick, depending on the drainage, making it a versatile ingredient for both savory and sweet dishes. The product is a valuable source of high biological value protein, contains calcium, B vitamins, and, in fermented versions, beneficial bacterial cultures; the relatively low fat content in low-fat varieties supports weight loss diets and muscle building. In the kitchen, cottage cheese works well as a spread, a filling base for dumplings and pancakes, an ingredient in salads, dips, as well as cheesecakes and creams. It should be stored in a cool place (refrigerator 2–6°C) in a tightly sealed container, away from strongly aromatic products; once opened, it is best consumed within a few days. Freezing is possible, but after thawing, the consistency may separate, so it is better to use it for cooking or baking.
