Description
Common onion is a vegetable with a layered, crunchy structure and thin skin in shades of white, yellow, or red; raw, it has a sharper, spicy flavor that softens and sweetens during cooking, with caramelization bringing out a deep umami note. It is low in calories, rich in fiber and vitamin C, as well as sulfur compounds and flavonoids (e.g., quercetin), which exhibit anti-inflammatory and antioxidant properties, and may support heart health and glycemic regulation as part of a balanced diet. In the kitchen, onion serves as an aromatic base for soups, sauces, stews, and stir-fries, works well raw in salads and sandwiches, and is used for pickling, grilling, or caramelizing. It is best stored in a cool, dry, and well-ventilated place away from potatoes; whole, unpeeled onions do not like the fridge, while cut onions should be stored tightly in the fridge and used within a few days.
