Potato starch
Description
Potato starch is a fine, white powder with a neutral taste and a smooth, silky texture that, when cooked, creates a transparent, uniform gelatinous consistency. It is virtually odorless and does not alter the flavor of dishes. Nutritionally, it consists mainly of carbohydrates and provides very few proteins or fats; it is gluten-free and easy to digest. It can provide resistant starch when cooled, which supports the gut microbiome and has a moderate effect on glycemia, but it is not a source of vitamins or minerals. In the kitchen, it is used as a thickener for sauces, soups, fillings, and creams, as an ingredient in gluten-free mixes, and for breading to achieve a crispy crust when frying. It should be stored in a sealed, dry, and cool place, away from moisture and strong odors; once opened, it is best used within a few months.
