Description
18% cream has a smooth, creamy texture and a light beige color, with a delicate, slightly tangy dairy flavor; it is liquid and easy to combine with other ingredients, not foaming like high-fat creams. From a nutritional standpoint, it provides energy mainly from saturated fats, as well as fat-soluble vitamins (A, D) and small amounts of calcium and protein; in moderate amounts, it can increase the satiety and flavor of dishes, but it is worth controlling portions due to its calorie content. 18% cream is great for lightening soups, sauces, stews, salads, and cold desserts, for drizzling over coffee, or finishing baked dishes; it is not the best for whipping stiff, but it works perfectly as an ingredient in creams and sauces. Store in the refrigerator at a temperature of 0–4°C in its original packaging, and use within a few days after opening; freezing is not recommended due to separation, which can be attempted to restore by vigorous mixing.
