Description
30% cream (for caramel) is a thick, silky cream with a creamy color and a rich, buttery flavor that has a distinct fattiness, which softens acidity and enhances the sweetness of caramel. Its high fat content gives sauces a smooth, glossy consistency and allows for stable emulsification of butter with sugar when preparing caramel. Nutritionally, 30% cream is calorie-dense and rich in saturated fats, providing fat-soluble vitamins (A, D, E, K) and calcium, so it should be used in moderation as a source of energy and flavor. In the kitchen, it works perfectly for making caramel, sauces, ganache, creams, ice creams, and cream soups, as well as a thickener and an addition to coffee.
