Ladyfingers (savoiardi)
Description
Savoiardi are light, elongated sponge cookies with a dry, slightly crunchy crust and a soft, porous interior. They have a subtle, sweet flavor with hints of vanilla and eggs, and a creamy color with a delicate, powdered finish. Their structure absorbs liquids well without losing their shape completely. Nutritionally, they are primarily a source of quickly digestible carbohydrates and a small amount of protein from eggs, with low fat and sodium content, while being low in fiber and micronutrients. Therefore, it is advisable to combine them with dairy products, fruits, or nuts for a better balance. They are typically used in tiramisu, layered desserts, chilled creams, as a base soaked in coffee or alcohol, and as a light snack with fruits. Store in an airtight container in a dry, cool place, avoiding moisture; consume immediately after soaking, and if necessary, they can be quickly restored to crispness in the oven.
