Freshly squeezed lemon juice
Description
Freshly squeezed lemon juice has an intense, refreshing flavor with a distinct acidity and a light yellow, slightly cloudy color with fine pulp fibers. It provides aromatic, citrusy refreshment that brightens dishes without adding sugar or fat. From a nutritional standpoint, it is low in calories, rich in vitamin C, flavonoids, and natural antioxidants; it supports immunity, iron absorption, digestion, and may help prevent kidney stones by increasing urine flow. Typical uses include dressings, marinades, sauces, baking, beverages, and finishing fish, vegetables, and salads, as well as preventing fruit from browning. To maintain freshness, store the juice in a tightly sealed glass container in the refrigerator for up to 3–4 days or freeze in portions (ice cubes) for several months.
