Fresh lemon juice
Description
Fresh lemon juice has an intense, refreshing flavor — distinctly sour with a hint of bitterness from the peel — as well as a bright yellow, clear color and a strong citrus aroma that enhances dishes and drinks without overpowering them. As a low-calorie ingredient, it primarily provides vitamin C, small amounts of potassium and folates, and citric acid, while also acting as an antioxidant and supporting the absorption of iron from plant foods. Regular moderate consumption may help boost immunity, digestion, and hydration. In the kitchen, lemon juice is versatile: it is used in dressings, marinades, sauces, desserts, drinks, and cocktails, as well as for "finishing" dishes to highlight flavors and balance richness. Fresh juice is best stored in a tightly sealed glass container in the refrigerator for 48–72 hours; it can also be frozen in ice cubes for several months. Whole lemons can be stored in the refrigerator for 2–4 weeks.
