Vinaigrette dressing
Description
Vinaigrette is a classic, lightly emulsified dressing with a bright golden color, a shiny surface, and usually a smooth consistency. The flavor is distinctly tangy-oily with hints of mustard, herbs, and possibly garlic; the ratio of oil to vinegar (often 3:1) determines the mildness or sharper character of the dressing. Nutritionally, vinaigrette is a source of calories mainly from vegetable fat, providing unsaturated fatty acids and fat-soluble vitamins (A, E) as well as polyphenols from vinegar and herbs; a serving (about 15 ml) typically contains around 80–100 kcal. Moderate use supports the absorption of nutrients from vegetables and can positively influence the lipid profile. The dressing pairs perfectly with salads, grilled vegetables, fish, and sandwiches. Store it in a tightly sealed container in the refrigerator, shake before use, and consume homemade dressing within 5–7 days.
