Description
Dried mushrooms (porcini or boletus) have an intense, earthy aroma and a rich umami flavor, with hints of nuts and forest; when dried, they are dark, wrinkled, and hard, but after soaking, they regain a firm, meaty texture. They are low in calories, provide plant protein, fiber, B vitamins, potassium, selenium, and a unique antioxidant called ergothioneine, which supports the immune system and metabolic functions of the body. In the kitchen, they greatly enhance the flavor of soups, risottos, sauces, fillings, and meat dishes; they can be ground into powder as a flavor concentrate or the liquid left after soaking can be used as a broth base. To maintain quality, store them tightly in a dry, cool, and dark place, avoiding moisture; once opened, it's best to keep them in a jar or vacuum-sealed packaging, and rehydrated ones should be used immediately or stored briefly in the refrigerator.
