Description
Dried mushrooms, such as porcini, have an intense, deep umami flavor with earthy and nutty notes; after soaking, they regain a meaty texture, and their dark brown caps and tough stems become dark brown and firm. They are an excellent addition to soups, risottos, sauces, and stews, pairing well with pasta, game, meat, and braised vegetables, and the water left after soaking is a flavorful broth that should not be wasted. Nutritionally, dried mushrooms are low in calories, contain protein, fiber, B vitamins, trace amounts of vitamin D, as well as minerals like potassium and selenium, along with antioxidants and beta-glucans that support immunity. Store them in an airtight, dark, and dry container in a cool place; once opened, it's best to use them within a year, and keep ground powders in small portions to preserve their aroma.
