Description
Dried mushrooms, such as porcini, have an intense, earthy flavor with a distinct umami note and an aromatic, slightly nutty background; after soaking, they regain a meaty texture and a dark, sometimes marbled appearance. To prepare them, soak in warm water and let sit for 20–40 minutes or briefly boil, then rinse, separating any sand and keep the soaking liquid as an aromatic broth after filtering. Nutritionally, dried mushrooms are low in calories, contain protein, fiber, B vitamins, vitamin D (after exposure to light), and minerals, especially potassium and selenium, as well as antioxidant compounds that support immunity. They complement soups, risottos, sauces, fillings, stews, and pasta, enhancing the flavor of dishes. Store them tightly in a dry, dark, and cool place; well-dried mushrooms can be stored for a long time, and for extra assurance, they can be kept in the freezer.
