Description
Dried ancho peppers are dried poblano varieties with a dark red-brown, wrinkled skin and a mild, complex flavor that combines sweet, fruity, and slightly smoky notes with minimal heat. They are low in calories, a source of fiber, vitamins (especially A and C), as well as antioxidants and carotenoids. The anti-inflammatory compounds and trace amounts of capsaicin support metabolism, the immune system, and cardiovascular health. In the kitchen, ancho peppers are great for mole, adobo, sauces, braised meats, soups, and marinades; when soaked, they provide a thick, aromatic base for pastes and purees, and can also be ground into powder. Store whole pods in an airtight container in a cool, dark, and dry place — they retain their aroma for about a year, while ground peppers lose intensity more quickly and should be used within a few months.
