Fresh mushrooms (e.g., chanterelles, porcini, oyster mushrooms) have a pronounced, forest aroma with nutty and umami notes; their appearance can vary — from golden, small chanterelles to meaty caps of porcini to delicate, fan-shaped oyster mushrooms — and the texture is usually firm and elastic. They are low in calories, rich in water and fiber, and a source of B vitamins, selenium, potassium, and — when exposed to light — vitamin D; they also contain antioxidants and beta-glucans that support the immune system and metabolism. Culinarily, they are perfect for frying, stewing, soups, sauces, risottos, pastas, omelets, and grilled dishes, enhancing meals with umami flavor.
