Description
Fresh spinach (baby) has delicate, slightly sweet green notes with a subtle, non-bitter bitterness; the leaves are small, thin, soft, and intensely green, giving an attractive, fresh appearance in salads and warm dishes. It is low in calories, rich in vitamins A, C, and K, folic acid, iron, magnesium, and antioxidants such as lutein and zeaxanthin, which support eye, bone, and cardiovascular health and have anti-inflammatory effects. It works great raw in salads and smoothies, as an ingredient in omelets, soups, risottos, pasta, and dishes with garlic and lemon, as well as for quick sautéing or baking with cheese. Store it in the refrigerator in a perforated bag or container with a paper towel, without washing it before storing, and use it within 3–5 days; it can also be blanched and frozen.
