Coconut flakes
Description
Coconut flakes are thin, shredded pieces of dried coconut flesh with a creamy-white color and a pleasantly sweet-nutty aroma. They have a slightly fibrous texture and can come in fine or coarser forms. They are rich in fats, mainly saturated MCTs (e.g., lauric acid), providing a good amount of calories, as well as fiber and minerals such as manganese, copper, and iron; moderate consumption may support feelings of fullness and provide a quick source of energy, but it is important to keep in mind their fat content and calorie density. In the kitchen, coconut flakes work well in baked goods, muesli, smoothies, desserts, toppings, and as a crunchy sprinkle for salads and Asian dishes, as well as a coating or ingredient in plant-based spreads. It is best to store them in an airtight container in a dry, cool, and dark place; an unopened package in the refrigerator or freezer extends shelf life (a few months in the refrigerator, up to about a year in the freezer). Regularly check the smell and taste to detect any rancidity.
