Potatoes
Description
Potatoes are a versatile starchy ingredient with a mild, slightly sweet, and starchy flavor and a varied texture — from mealy and creamy to waxy — with skin and flesh in shades of brown, yellow, white, or purple. They are rich in complex carbohydrates that provide energy, fiber that supports digestion, vitamin C, vitamin B6, and potassium, while being low in fat, making them a valuable part of a diet that promotes satiety and blood pressure control. In the kitchen, they are suitable for boiling, baking, mashing, frying, or stewing — they work great in soups, salads, casseroles, pancakes, or gnocchi. They should be stored in a cool (around 4–10°C), dark, and dry place with good ventilation, away from light and onions; do not refrigerate raw potatoes, and remove sprouts and discoloration before use.
