Description
A large chicken egg yolk has a creamy, intensely yellow color and a rich, slightly buttery flavor with a characteristic sweetness from the white. As a concentrated source of fat and protein, it is calorie-dense but provides valuable nutrients: vitamins A, D, E, K, and B vitamins (including B12), choline that supports brain function, as well as lutein and zeaxanthin beneficial for vision. It also contains essential fatty acids and minerals, which in moderate amounts support satiety, metabolism, and neurological health. In the kitchen, the yolk is effective in emulsifying sauces (mayonnaise, hollandaise), creams, puddings, ice creams, cakes, and for enriching soups and sauces, giving them a silky texture and flavor.
