In this version, we combine creamy, delicately flavored ricotta with the intense sweetness of roasted figs, whose flavor deepens and becomes more caramel-like with the heat. The dish is finished with aromatic thyme honey, which adds an herbal note that balances the sweetness. Optional additions, such as crunchy nuts and tangy balsamic cream, create a multi-dimensional composition of flavors and textures. Visually, the dish is incredibly appetizing – the contrast of deep purple figs, white cheese, and golden honey on a crispy toast is eye-catching and stimulates the appetite. Preparation of ingredients

Start by preparing all the ingredients. Preheat the oven to 200°C with the convection function or 220°C in top-bottom mode. Gently wash the figs under running water and dry them with a paper towel. Cut off the tough ends (stems), then slice each fig in half lengthwise. Rinse the thyme sprigs as well and dry them.

Preparing all the ingredients before starting to cook (known as mise en place) makes the entire process smoother and less stressful. Use a sharp, small fruit knife to precisely cut the figs without crushing them.

Baking figs

Place the fig halves on a small baking tray lined with parchment paper, cut side up. Drizzle each half lightly with olive oil (about 1 teaspoon for all the figs). Put in the preheated oven and bake for 10-15 minutes. The figs are ready when they become very soft, their juices start to bubble, and they slightly caramelize at the edges.

Line the baking tray with parchment paper to prevent sticking and make cleanup easier – the caramelizing fig juice can be very sticky. Watch the figs towards the end of baking to avoid burning them.

Preparing the toast

While the figs are baking, prepare the toasts. Cut the baguette or ciabatta into 4 slices about 1.5-2 cm thick, preferably at a slight angle to create a larger surface area. Brush each slice on both sides with olive oil using a kitchen brush. Place the slices on another baking sheet and put them in the oven for the last 5-7 minutes of baking the figs. Bake until they become golden and crispy. After removing from the oven, you can gently rub them with a halved garlic clove for extra aroma (if you like).

It's best to use a serrated knife to avoid crushing the bread while slicing. If you don't have a brush, you can drizzle the slices with olive oil and spread it with your fingers. Be careful not to burn the toasts – they should be golden, not brown.

Thyme honey

While the rest of the ingredients are in the oven, prepare the honey. In a small saucepan, place the honey and thyme sprigs. Heat on the lowest setting for 2-3 minutes, just until the honey becomes very liquid and starts to smell of thyme. Do not bring to a boil to avoid losing the valuable properties of the honey. Remove from heat and set aside to let the flavor meld. Before drizzling over the toast, remove the thyme sprigs.

Use a small saucepan with a thick bottom to heat the honey evenly and prevent it from burning. Heating honey with herbs is a simple infusion technique that allows you to give it a deep aroma.

Dish composition

Remove the toast and figs from the oven. Spread a generous portion of ricotta cheese (about 1-2 tablespoons per slice) on each warm toast. Season the ricotta with a pinch of sea salt and freshly ground black pepper. On top of the cheese, place two halves of the roasted, warm fig. Drizzle everything with a stream of the prepared thyme honey.

Assemble the toasts just before serving to keep the bread crispy. The heat from the toasts and figs will gently melt the ricotta, making the dish even more delicious.

Finishing and serving

Transfer the finished toasts to a cutting board or a large plate. If you are using optional ingredients, now is the time to add them. Sprinkle the toasts with coarsely chopped, toasted walnuts or pistachios for added crunch. Finally, you can drizzle everything with a bit of balsamic cream, which will add a pleasant, tangy note. Garnish with fresh thyme leaves and serve immediately while they are still warm and crispy.

To toast the nuts, place them in a dry, heated pan and toast for 2-3 minutes, stirring frequently, until they start to smell fragrant. Be careful not to burn them. Serving on a wooden board will highlight the rustic and appetizing character of the appetizer.
