Mixing liquids
In a pitcher with crushed spices, pour in 400 ml of apple juice, the freshly squeezed juice of an orange, and 30 ml of lemon juice. Stir with a fork or spoon for 20–30 seconds to combine the juices with the spices. After mixing, let it sit for 3–5 minutes to allow the flavors to meld - with a closed pot or covered pitcher, the aromas will be released more intensely.
Draining
Strain the mixture through a fine sieve into a clean jug or bowl, using a spoon to press down the ginger and spices — stop when the liquid flows clear. Discard the leftover ginger fibers and cloves (throw away the cloves). Check the taste of the juice: if it is too sour, optionally add 30 g of honey and mix well until it dissolves; honey dissolves better in slightly warm liquid, but in the quick version, mix vigorously.
Drink assembly
Fill tall glasses halfway with ice (if you want a chilled version) or skip the ice if you prefer the drink at room temperature. Pour 120–130 ml of filtered apple-orange juice into each glass. Then top each glass with 75 ml of cold sparkling water, pouring slowly over a spoon to achieve a nice fizz and a delicate layer of bubbles.
