Preparation steps

Prepare your tools and surfaces: you will need a cutting board, a sharp knife, measuring cups or a jug, a hand blender or a countertop blender (optional), a large mixing bowl or jug, and 4 glasses. Wash the fruits and dry them with a paper towel.

Use a sharp knife for quick cutting (it crushes the fruit less). If you don't have a blender, prepare a large bowl and a spoon for mixing. A plastic cutting board makes cleaning easier.

Preparing the apple

Peel the apple if you prefer it without the skin (the skin is edible and adds fiber). Place the apple on a cutting board, cut off the top and bottom, turn it around and cut it into quarters. Remove the core with a sharp knife. Cut each quarter into cubes about 1 cm. Place the chopped apple in a bowl.

Use a small knife to precisely cut out the seed cavity. 1 cm cubes provide a pleasant texture in the drink; if you want a smooth cocktail, cut smaller pieces.

Preparation of plums and forest fruits

Cut the plums in half and remove the pits, then slice each half into thin slices or small pieces (about 1 cm). If the berries are fresh, check and remove the stems; if frozen — thaw for 5–10 minutes in a bowl, draining excess juice. Add the plums and berries to the bowl with the apple.

To defrost frozen fruits, use a strainer over a bowl to separate the juice — the juice can be kept as an addition to a nearly smooth smoothie. Use a silicone spatula to transfer the fruits so they don't get crushed.

Mixing / blending (choose variant)

Option A (with pieces): add the chopped fruit to the kefir and gently stir with a wooden spoon for 20–30 seconds, until the fruit is evenly distributed in the drink. Option B (smooth cocktail): place the kefir and fruit in a blender or use an immersion blender in a tall container; blend briefly for 20–30 seconds, until you achieve a uniform, creamy consistency. If you want to sweeten it, add honey (30 g) and blend for an additional 5–10 seconds.

Use a blender on low speed to avoid overheating the kefir and excessive frothing. If you choose variant A, mix gently so that the fruits do not break down completely. This is a key step that determines the consistency of the drink.

Seasoning and serving

Taste the kefir. If it is too sour, add an additional half a tablespoon of honey (7–8 g) and mix. Tear off 6–8 mint leaves, chop them finely or crush them with your fingers (this will release the oils) and add to the drink or use for decoration. Pour the kefir with fruits into 4 glasses; if serving in cups, you can add a few ice cubes (optional).

Crush the mint in your hands just before adding it to release the aroma. If you are adding ice, the drink will cool quickly, but it will dilute — use it sparingly.

Cleaning and Storage

Wash the used dishes immediately with water and dish soap. Store the remaining drink in the refrigerator in a closed pitcher for up to 24 hours — the kefir with fruit will lose its freshness and may become more sour.

Do not keep the drink outside the fridge for more than 2 hours at room temperature. If you want to prepare a portion for later, store the fruits separately from the kefir and combine just before serving.
