Preparation steps

Start by preparing the aromatic ingredients. Wash the orange thoroughly under hot, running water, then scrub it with a brush to remove any impurities and wax from the skin. Dry it with a paper towel. Using a sharp knife, slice the orange into pieces about 0.5 cm thick. If you are using optional ginger, peel it with a teaspoon (this is the easiest way) and cut it into thin slices.

It is best to use a large pot with a thick bottom (with a capacity of at least 3 liters) that distributes heat evenly. Washing the oranges is crucial, as they will be cooked with the peel, which will release its aroma into the drink.

Pour 1000 ml of cloudy apple juice and 500 ml of cranberry juice into the prepared pot. Gently stir the liquids with a wooden or silicone spoon to combine.

Using a mixture of two juices provides a balanced flavor – sweet from the apples and sour from the cranberries. If you prefer a sweeter drink, you can adjust the proportions in favor of the apple juice.

Add the prepared orange slices, 2 cinnamon sticks, 8 whole cloves, and 2 star anise to the pot with the juices. If using, also add the ginger slices. All the spices should be submerged in the liquid. Stir gently again.

Whole spices are better than ground ones because they release their aroma slowly and do not make the drink cloudy and 'gritty'. You can stick cloves into the skin of orange slices – they will be easier to remove before serving.

Place a pot on the stove and heat it over medium power. Bring the drink to the point where it is very hot and starts to steam, but do not let it boil. As soon as you notice the first small bubbles appearing at the edges of the pot, immediately reduce the burner to the lowest setting. Cover the pot with a lid and let the drink gently 'infuse' for about 20-25 minutes. The goal is for the juices to slowly absorb the flavor of the spices.

This is the most important step! Do not let the mulled wine boil. Boiling will destroy vitamins (especially vitamin C from the oranges) and may cause the spices, especially cloves and orange peel, to release bitter notes. The drink should only be heated.

After 20-25 minutes, remove the pot from the heat. Taste the drink with a clean spoon to assess its flavor. If the juices are sweet enough, it may not need additional sweetening. However, if you prefer a sweeter taste, this is the moment to add honey. Add 1-2 tablespoons of honey and stir well until completely dissolved. Taste again and add more if needed.

Remember to add honey to the slightly cooled drink (below 40°C) to preserve its valuable health properties. If you don't have honey, you can use maple syrup or agave syrup.

Prepare mugs or glasses made of thick, heat-resistant glass. Using a ladle, pour the hot mulled wine, making sure that each mug gets a slice of orange and possibly a star anise for decoration. You can also strain the drink through a sieve if you prefer a clear version without any 'floating' additions. Finally, if using, add a few fresh cranberries to each mug. Serve immediately while hot.

Use glass mugs to beautifully showcase the deep color of the drink. You can also decorate the rim of the mug with a fresh sprig of rosemary for added aroma. Be careful when pouring, the drink is very hot!
