Gently add the previously prepared orange slices, 2 cinnamon sticks, about 8-10 cloves, and 2 star anise. If you decided to use ginger, also add its slices. Place the pot on the stove over medium heat.
Flavor infusion
Slowly heat the mixture, stirring gently with a wooden spoon from time to time. Watch the liquid – your goal is to bring it to a point where it is very hot, and steam begins to rise from its surface. Small bubbles will appear at the edges of the pot. When this happens, immediately reduce the burner to the absolute minimum. Cover the pot with a lid and let the drink steep gently for 15-20 minutes. During this time, the spices will release their full aroma, and the flavors will meld together.
Seasoning and serving
After the infusion time has passed, remove the pot from the heat. Pour the freshly squeezed juice from half an orange into the hot drink and stir. Taste the drink with a spoon (be careful, it's hot!). If you find it not sweet enough, this is the perfect moment to add honey or maple syrup. Add one tablespoon, stir thoroughly until dissolved, and taste again. Adjust the sweetness to your liking.
Serving
Prepare mugs or glasses made of thick, heat-resistant glass. Place a fine-mesh strainer on top of them. Using a ladle, slowly pour the hot mulled wine through the strainer into the mugs. This will remove all the spices and pieces of fruit, resulting in a clear drink. Garnish each serving by placing one of the 'cooked' star anises or a cinnamon stick inside. You can also use a fresh slice of orange.
