This spiced apple cider is the essence of autumn-winter comfort captured in a mug. It is a non-alcoholic, warming drink that fills the entire home with its aroma, creating an incredibly cozy atmosphere. Its base is naturally cloudy apple juice, which is slowly cooked with a bouquet of aromatic spices: cinnamon sticks, cloves, and star anise. Freshness and a citrus note are added by slices of juicy orange, while slices of fresh ginger contribute a slightly spicy character. An optional addition of a sprig of rosemary introduces a surprising, forest-like note that beautifully complements the sweetness of the apples. Visually, the drink is stunning: it has a deep amber color, and in clear mugs, the fruits and spices submerged in it are beautifully visible. It is perfect for chilly evenings, gatherings with friends, or as a festive drink for the whole family, including children. Serve it hot, garnished with fresh additions, to fully enjoy its taste and appearance.

Preparation steps

Start by preparing the fruits and ginger. Wash the orange thoroughly under hot running water, scrubbing its skin with a brush. This is important because we will be using it unpeeled. Then dry it with a paper towel and cut it into slices about 0.5 cm thick. Peel a piece of ginger using a small knife or the edge of a teaspoon (this is a very effective method) and slice it thinly.

For preparing the ingredients, you will need a cutting board and a sharp knife. If you don't have organic oranges, you can blanch them in boiling water for about 30 seconds to remove wax and impurities.

In a large pot, place all the spices: cinnamon sticks, cloves, and star anise. Add the sliced orange and ginger. If using, also add a sprig of fresh rosemary now. Pour in 1 liter of cloudy apple juice. Gently stir with a wooden spoon to evenly distribute the ingredients.

A pot with a thick bottom and a capacity of at least 2 liters works best. The thick bottom will prevent the sugars from the juice from burning during heating.

Place a pot on medium heat and slowly warm the drink. Your goal is to bring it to the point where it is very hot, but NOT BOILING. Watch the liquid – when small bubbles start to appear at the edges of the pot and intense steam rises from the surface, reduce the heat to the minimum. Leave the mulled drink on low heat for about 20-25 minutes to allow the flavors and aromas of the spices to release and infuse into the juice.

This is a key step! Cooking (bringing to a boil) the drink will cause the spices to become bitter, and the delicate aromas to dissipate. We want the drink to 'simmer', not 'boil'. Do not cover the pot to control the temperature.

After 20-25 minutes, remove the pot from the heat. Now it's time to add the sweetness. Measure out the honey and add it to the hot drink. Stir slowly until the honey is completely dissolved. Taste the mulled wine, and if you prefer a sweeter flavor, add a little more honey. Remember that apple juice is already sweet on its own.

Ingredients: wildflower honey
Adding honey to a slightly cooled beverage (not boiling) helps retain its valuable health properties. If you are using maple syrup, add it in the same way.

Prepare mugs or glasses made of thick glass. Using a ladle, carefully pour the hot drink into the vessels. You can strain it through a sieve beforehand for clarity, but it looks much more impressive served with spices and fruits. Place a slice of orange from the cooking into each mug; you can also add a fresh one for better appearance. Optionally, for decoration and flavor, toss in a few fresh cranberries. Serve immediately while hot.

Use mugs with handles or ceramic cups to avoid burning your hands. If you are serving the drink to children, make sure it has cooled slightly. You can also stick cloves into a fresh slice of orange and place it on the rim of the cup as an additional decoration.

Serve the mulled wine in thick glass mugs or ceramic cups that retain heat well. For maximum visual effect, garnish each serving with a fresh slice of orange, optionally studded with a few cloves, a small sprig of rosemary, and a few fresh cranberries that will beautifully float on the surface.

🥡 Storage

If you have leftover mulled wine, strain it from the spices and fruits, then store it in the refrigerator in a sealed jar or pitcher for up to 3 days. Before serving again, heat it over low heat, but be careful not to bring it back to a boil.
