In a large pot with a thick bottom (with a capacity of at least 2-3 liters), place all the prepared ingredients. Pour in 1000 ml of apple juice. Add the sliced oranges and the juice squeezed from the other half. Toss in the cinnamon sticks, cloves, star anise, and two sprigs of fresh rosemary. If you opted for the version with ginger, also add its slices.
Place a pot on the stove over medium heat. Slowly heat the beverage, gently stirring with a wooden spoon from time to time. Watch the surface of the liquid closely. Your goal is to bring it to the point where it is very hot and steam begins to rise from it, but BEFORE it starts to boil. Boiling could cause the spices to become bitter and the beverage to lose some of its delicate aroma.
When the mulled wine is hot, reduce the heat to the absolute minimum, so that the drink only gently 'flickers' but does not boil. Cover the pot with a lid, leaving a small gap, and let it steep for about 15-20 minutes. This time will allow the spices to release their full essential oils and flavors, which will infuse into the apple juice.
After the brewing time is up, remove the pot from the heat. Taste the drink with a teaspoon (be careful, it's hot!). If you find it not sweet enough, now is the time to add honey. Add one tablespoon at a time, stirring until completely dissolved and tasting after each addition to achieve your perfect level of sweetness. The mulled wine is ready to serve. Using a ladle, pour the hot drink into mugs or thick glass cups. Place a slice of orange and one of the spices from the pot in each vessel for decoration.
