Preparation steps

Syrup

Prepare a simple sugar syrup: measure 150 g of sugar and 200 ml of water into a small saucepan. Pour in the water, add the sugar, and set over medium heat. Stir with a wooden spoon until the sugar completely dissolves (this will take about 3-4 minutes). Once the sugar has dissolved, raise the heat to a gentle boil and simmer for 1-2 minutes — the syrup should become clear and slightly thicker, but do not cook it longer to avoid it thickening too much. Turn off the heat and let the saucepan cool to room temperature (about 15-20 minutes). The syrup will thicken a bit more as it cools.

Ingredients: White sugar, Water (for syrup), Honey
Use a small saucepan with a diameter of 16-18 cm and a wooden or silicone spoon. Do not bring the syrup to a strong boil or caramelization (browning) — it should be clear, simple, and sweet. If you are using honey instead of sugar, dissolve 60 g of honey in 50 ml of warm water (do not boil the honey).

Lemon juice

Prepare the lemons: take 6 lemons (600 g). Before cutting, roll each lemon on the countertop with your hand, pressing down firmly — this makes it easier to extract the juice. Cut the lemons in half lengthwise. Using a manual or electric juicer, squeeze the juice into a strainer placed over a jug or large bowl to separate the seeds and pulp. You should get about 180–240 ml of fresh juice from 6 lemons, depending on the juiciness of the fruit. Strain the juice through a fine sieve to remove seeds and larger pieces of pulp.

Use a manual citrus juicer (preferably with a container) or a hand press; if you don't have one, you can use a fork and squeeze it hard by hand, straining the juice through a fine sieve. Do not leave the white, bitter part (albedo) - when cutting, remove the hard white parts from the peels if you are using them for decoration.

Assembly and serving

In a large pitcher (capacity 1.5–2 l), combine the cooled syrup (from step 1) with the strained lemon juice (from step 2). Mix thoroughly with a spoon. Add 800 ml of cold water and mix again. Taste the drink: if it is too sour — add more syrup (1 tablespoon = 15 ml of syrup at a time), if it is too sweet — add more cold water. If you want a sparkling version, replace 300–600 ml of cold water with 300–600 ml of sparkling water (see optional ingredient).

Use a glass pitcher with a capacity of at least 1.5 liters and a long spoon for stirring. Gently mix from the bottom up to avoid excessive aeration of the drink. Adjust the water/syrup ratios to your taste preference — a good starting ratio is 1 part juice + 0.8 parts syrup (by volume) + the rest water.

Prepare the mint: separate a few nice sprigs of mint (leave some for decoration). To release the aromas, take a handful of mint leaves and gently rub them between your hands (use the 'clap' technique — bring your hands together and make a quick clap), or lightly tear the leaves with your fingers. Place half of the leaves into the pitcher with lemonade and gently stir — do not chop the mint finely to avoid a bitter taste.

Use fresh whole leaves and sprigs. Do not chop the mint finely with a blender or knife — this releases bitter oils. Set aside the remaining sprigs for decorating the glasses.

Chilling and serving: add ice cubes to the pitcher (to taste, about 300 g) or place the ice directly in the glasses. Let the lemonade sit in the fridge for 10–20 minutes to allow the flavors to meld and the drink to chill well. When serving, place a few slices of lemon and a sprig of mint in the glasses. Set an additional pitcher of sparkling water on the table so guests can add fizz themselves.

Use tall collins glasses or wide lemonade glasses. If you want to prepare the lemonade in advance, it's best to store the syrup and juice separately, and combine them 30 minutes before serving to maintain freshness.

Additional flavor refinement

Adjusting sweetness and flavor: after tasting, you can add 1–2 tablespoons (15–30 g) of syrup if you prefer a sweeter lemonade, or 1–2 teaspoons of honey (about 10–20 g) — add the honey to a small amount of warm water to dissolve it before adding to the pitcher. If you want to add a spicy touch, you can drop a thin slice of fresh ginger into the glasses (optional).

If you are adding honey, remember that it is thicker and needs to be thoroughly dissolved to distribute well. Additionally, you can add 1-2 slices of fresh orange in a few glasses for decoration.

Serve in chilled glasses with a few ice cubes, a slice of lemon, and a sprig of mint. For a 'festive' version, use thick glass glasses and serve on a tray with sprigs of evergreen as decoration. Place a bowl with extra citrus slices and mint leaves next to it, along with a bottle of sparkling water as an option for guests.

Store the lemonade in a closed pitcher in the refrigerator for up to 48 hours. The best flavor is within the first 24 hours. If you prepared the syrup and juice separately, store them separately: syrup in a tightly sealed jar for up to 2 weeks in the refrigerator, fresh lemon juice for up to 48 hours. Do not freeze fresh lemonade as a whole (it may lose freshness and texture), but you can freeze ice cubes with teas/fruits for decoration.
