Traditional Margarita in a fresh, fruity version — with the addition of seasonal strawberries. This refreshing cocktail comes from Mexico, combining the dryness of tequila, the sweetness of orange liqueur, and the acidity of freshly squeezed lime, enriched with the natural aroma of strawberries. Served in low glasses with a salted rim or without, it is perfect as an aperitif or a party drink, especially for New Year's Eve 2025 — it has an attractive pink color and a pleasant balance of flavors. Serve chilled, with ice and a slice of lime or a whole strawberry on the rim of the glass; a non-alcoholic version can be easily prepared by replacing tequila with sparkling water and a bit of agave extract.

Preparation steps

Preparing the syrup

Prepare a simple 1:1 syrup. Measure 80 g of sugar and 80 ml of water. In a small saucepan, combine the sugar and water, heating over medium heat, stirring with a wooden spoon until the sugar completely dissolves. When the mixture starts to gently boil, reduce the heat and cook for 1 minute uncovered. Remove from heat and let it cool (about 10–15 minutes). Once cooled, the syrup will be clear and slightly sticky. Measure out 80 ml of the resulting syrup for later use.

Ingredients: White sugar, Water
Use a saucepan with a diameter of 16–18 cm and a wooden spoon. Do not allow it to boil vigorously so that the sugar does not caramelize (black syrup). Store the syrup in the refrigerator in a closed jar for up to 5 days.

Preparing strawberries

Wash the strawberries under cold running water, remove the stems (remove the green tops). Measure out 200 g of strawberries. Cut the larger fruits in half or quarters to make them easier to blend. Set aside 1/4 of the strawberries for decoration (4 pieces of about 15 g each).

Use a colander and paper towel to dry the fruit. I advise against using overly soft, spoiled strawberries, as the smoothie will have an unpleasant taste.

Preparation of lime juice

Cut 2 limes in half and squeeze the juice from them using a manual juicer (or your hands). Measure out 120 ml of fresh lime juice. Strain through a fine sieve to remove seeds and most of the pulp — we want clear juice without large pieces.

Use a manual juicer or a small press. If the limes are cold, warm them slightly in your hands and press them on the cutting board before juicing — they will yield more juice.

Mixing the cocktail

Place the chopped strawberries (about 200 g) and 80 ml of prepared simple syrup into a blender. Blend until smooth puree (10–20 seconds at high speed). Pour the puree through a fine sieve into a large measuring cup, pressing with a spoon to extract the maximum amount of juice (you should have about 140–160 ml of strawberry puree).

If you don't have a blender, mash the strawberries with a potato masher in a bowl and strain through a sieve. Be careful not to leave large pieces of skin.

Prepare a cocktail shaker. Pour into the shaker's strainer (or a large measuring cup): 180 ml of tequila, 120 ml of triple sec liqueur, 120 ml of fresh lime juice, 80 ml of prepared syrup, and 140 ml of strawberry puree (the amount of puree depends on how much you squeezed; it should be about 140–160 ml). Add 300 g of ice (to the shaker, not to the measuring cup). Cover the shaker and shake vigorously for 12–15 seconds — you will feel that the outside of the shaker becomes very cold and slightly fogs up.

Use a metal shaker and a cocktail strainer if you have them. If not, use a large jar with a lid. Quick, vigorous shaking chills and slightly dilutes the drink — don't overdo it to avoid melting too much ice.

Preparing the glasses

If you want to salt the rim of the glass: rub the edge of each glass with a wedge of lime, then dip the rim of the glass in a shallow plate with combined sea salt (about 2 g per glass), gently twist to ensure the salt sticks evenly. If you prefer a sweeter rim, mix the salt with a bit of sugar and use the mixture.

It's best to use coupe glasses or low cocktail glasses. If you don't want salt, rub the rim with lime and leave it without a sprinkle.

Finishing and serving

After shaking, strain the cocktail through a sieve directly into prepared glasses filled with fresh ice (2–3 cubes per glass) or without ice if you prefer a more chilled drink. Pour evenly (about 100–120 ml per serving). Garnish each glass with half a strawberry perched on the rim and a slice of lime; optionally add mint leaves.

Use a cocktail strainer to catch small pieces of ice and pulp. Serve immediately — the cocktail loses its intensity and the fizziness of the chill after a few minutes.

Non-alcoholic variant (optional)

For the non-alcoholic version, replace 180 ml of tequila with 180 ml of sparkling water or a strong hibiscus tea (chilled), and substitute 120 ml of triple sec liqueur with 60 ml of orange juice and 60 ml of additional syrup (adjust proportions to taste). Proceed the same way: blend the strawberries, combine the ingredients, mix with ice, and serve.

It's a good alternative for non-drinkers — drinkers will feel a similar fruity-citrus sensation without alcohol.

There are many stories about the drink's origin; the most popular one tells of it being invented for a woman named Margarita (in Spanish 'daisy'). Serve the cocktail immediately after preparation, chilled. It is best served in coupe glasses or low cocktail glasses. A salt rim adds contrast — before salting, moisten the rim with lime. You can pour some of the strawberry puree as a 'float' on top for a nice layering of colors.

Store simple syrup in the refrigerator in a sealed jar for up to 5 days. Strawberry puree can be stored in the refrigerator for up to 24 hours. It is best to drink the prepared cocktail immediately; if you need to prepare it in advance, make the alcohol-syrup mixture and store it in the refrigerator for a maximum of 24 hours, but do not mix with ice before serving.
