Prepare the ingredients and tools: a blender with a capacity of at least 1 l, a cutting board, a sharp knife, a grater for beetroot (if using raw), a measuring cup, a strainer (optional). Take the kefir out of the fridge so it is not very cold — this will make blending easier.

Use a jar blender with a fruit blade; if you don't have a blender, use an immersion blender in a tall container. A wooden cutting board and a sharp knife ensure precise cutting.

Wash the apples and pear under running water. Cut the apples into quarters and remove the cores. Cut the pear in half and remove the core (if the skin is thin, you can leave it on). Cut the fruits into smaller pieces (about 2-3 cm) to make blending easier.

Use a sharp knife and a stable cutting board. If you want the smoothie to have a smoother consistency, peel the pear. Then weigh or measure the amount of chopped fruit.

Prepare the beet: if you are using pre-cooked or roasted beet, slice it into pieces about 1 cm thick. If you are using raw beet, peel it thinly and grate it on a fine grater (grate only as much as the recipe requires). Finely grated beet will blend quickly in a blender.

Cooked beetroot is sweeter and softer — if you only have raw, after grating, check if the pieces are not too thick (they may weigh down the blender). Use kitchen gloves if you don't want to stain your hands red.

Pour the kefir (400 ml) into the blender cup. Then add the chopped apple, pear, prepared beetroot, peeled and grated ginger (10 g), and lemon juice (20 ml). If you want to sweeten the smoothie, add honey (20 g) — you can add it later after tasting.

Pour the liquids at the bottom of the blender, and place the harder ingredients higher up — this makes it easier for the blades to work. Add honey after a short blending if you want to better control the sweetness.

Add ice (about 150 g of cubes). Close the blender and blend on medium to high speed for 45-60 seconds, until the mixture becomes smooth and uniform. If the blender has a pulse button, start with a few pulses to break up the harder pieces, then blend continuously.

Use the blender on a stable surface and keep the lid on while blending. If the mixture is too thick and the blender is struggling, add 1-2 tablespoons (15-30 ml) of water or more kefir and blend further. The batter (mixture) is ready when there are no visible pieces of fruit and the consistency is creamy.

Decoration and serving

Taste the smoothie and adjust the flavor: if it's not sweet enough, add half of the remaining honey and mix briefly. If it's too thick, add 1–2 tablespoons of kefir. Pour the smoothie into two tall glasses.

Taste with a small teaspoon after the first blending to avoid over-sweetening. Adjust the consistency — it should be thicker than juice but fluid when pouring.

Decorate the surface: cut small stars from thin apple slices using a small cookie cutter or cut out shapes with your nail and hang them on the edge of the glass. Sprinkle the top with chia seeds (15 g) — if you add them, you can soak them in 30 ml of water for 5 minutes beforehand to make them gel-like.

Use a small star-shaped mold or a precision cutter. If you are adding chia seeds without soaking, just sprinkle them on top for crunch; soaked chia will add thickness.

Serve immediately, preferably with a thick straw. If you prepare the smoothie in advance, store it in a sealed bottle in the refrigerator for up to 24 hours and shake vigorously before serving.

Best fresh — the taste and color change over time. For storage, use a bottle with a wide opening to easily shake before drinking.
