Preparation steps
Pear-Ginger Syrup
In a medium-sized pot (with a capacity of about 2 liters), place the chopped pears, ginger slices, and whole sprigs of rosemary. Pour in 250 ml of water. If you are using optional ingredients, add the cinnamon stick and star anise now.
Place a pot over medium heat and bring the mixture to a boil. Once it starts bubbling, reduce the heat to low, cover the pot, and simmer for about 15-20 minutes. The pears should become very soft and start to break down, and a strong, spiced-fruity aroma should fill the kitchen.
Remove the pot from the heat. Using a slotted spoon, take out the rosemary sprigs, cinnamon stick, and star anise. Leave the pears with ginger in the liquid. Add honey and stir until completely dissolved. Pour everything into a blender jug and blend on high speed until you have a perfectly smooth, uniform mixture. Then, to obtain a clear syrup, strain it through a fine sieve into a clean bowl, pressing the pulp with a spoon to extract as much liquid as possible. Set the syrup aside to cool completely.
Lemonade composition
In a large pitcher (with a capacity of at least 1.5 liters), combine the cooled pear-ginger syrup, freshly squeezed lemon juice, and the remaining 750 ml of cold water. Stir everything thoroughly with a long spoon until all the ingredients are combined and the drink has a uniform color.
Place the pitcher of lemonade in the refrigerator for at least 30 minutes to allow the flavors to meld and the drink to chill well. Serve in tall glasses filled with ice cubes. Garnish each serving with a fresh sprig of rosemary and a thin slice of pear for visual effect. For a warm version, heat the lemonade in a pot without bringing it to a boil and serve in mugs.
