Description

Creamy tapioca pearl pudding served with an intense strawberry sauce, presented in small cups with Halloween-style decorations (“bloody” streaks of sauce, fruits as “eyes”, toasted almonds as “bones”). The dish combines the delicate, slightly gelatinous texture of tapioca with a sweet and sour sauce. The pudding has mild, milky tones with a hint of vanilla that pairs wonderfully with the fruity, colorful topping — the visual effect is spectacular and slightly dark, perfect for a Halloween party. The recipe includes options: instead of fresh strawberries (out of season), you can use plum sauce or baked apples; additionally, I provide a variant with creamy whipped cream for a richer flavor. The portions are quite filling and look great in transparent cups or glasses.

Preparation steps

Pudding

1

Weigh the tapioca (160 g) and place it in a sieve. Rinse with cold water, shaking gently to remove excess starch and fine dust. Rinsing prevents the pearls from sticking together during cooking.

Ingredients: Tapioca
Use a fine sieve and a large bowl. Rinsing is important — if you don't do this, the pudding may be cloudy and sticky.
2

Pour the milk (500 ml) into a medium saucepan with a thick bottom. Add 80 g of sugar, a pinch of salt (1 g), and a split vanilla pod: cut it lengthwise and scrape the seeds into the milk with a knife, then add the whole pod to the saucepan. Heat over medium heat until the milk starts to steam (do not let it boil).

Ingredients: Milk, Sugar, Salt, Vanilla bean
The best is a pot with a thick bottom that distributes heat evenly. Heat the milk, stirring with a wooden spoon every 1–2 minutes to avoid burning. Temperature: gentle steaming, about 80°C.
3

When the milk is steaming, add the rinsed tapioca to the pot. Reduce the heat to low and cook over very gentle heat for 15–20 minutes, stirring frequently to prevent the pearls from sticking. After about 10 minutes, check the pearls: they should become translucent with a white core; if the core disappears, the tapioca is soft.

Ingredients: Tapioca, Milk
Use a silicone or wooden spoon for stirring. Cooking over too high heat will cause uneven softening and burning. The time depends on the size of the pearls — keep an eye on them.
4

If the pudding is too thick, add 30–50 ml of milk and cook for another 1–2 minutes. Taste with a spoon — the consistency should be smooth, the pearls soft in the middle, and the whole mixture creamy. Remove the vanilla pod.

Ingredients: Milk
The ideal pudding has a slightly gooey, not too thick consistency — it will thicken after cooling. Do not overcook, as the texture of the pearls will be lost.
5

Transfer the hot pudding to a bowl and cover it with plastic wrap directly touching the surface (this will prevent a skin from forming). Set aside to cool, then chill in the refrigerator for at least 2 hours (or overnight).

Ingredients: Tapioca
Use a glass or ceramic bowl. Press the foil against the surface of the mixture — this is a simple trick to ensure the pudding has a smooth, creamy texture and does not develop a dry top.

Strawberry sauce

6

Wash the strawberries (400 g), remove the stems, and cut them into quarters. Place the fruit in a wide saucepan or skillet, add 60 g of sugar and the juice of one lemon (about 50 g). Heat over medium heat for 6–8 minutes, stirring until the fruit releases its juice and begins to break down.

Ingredients: Strawberry, Sugar, Lemon
If you are using frozen strawberries, do not thaw them beforehand — put them straight onto the pan. Stir with a wooden spoon to prevent burning.
7

If the sauce is too thin, thicken it with potato starch dissolved in a tablespoon of cold water (10 g dissolved in 15–20 ml of water). Pour it in a thin stream into the hot sauce, stirring vigorously, and cook for another 1–2 minutes until the sauce thickens and becomes glossy. Taste and sweeten if necessary. For a Halloween effect, add 1–2 g of food coloring (optional) to achieve a deep blood-red color.

Ingredients: Potato flour, food coloring, Strawberry
First, dissolve the potato starch in cold water to avoid lumps. Gradually add the starch and stir with a whisk.

Finishing and decoration

8

Take the chilled pudding out of the fridge. If the mixture is too thick, gently stir with a silicone spatula. Divide the pudding into 4 transparent cups (about 120–130 g of mixture in each) so that the tapioca structure is visible.

Ingredients: Tapioca
Use a tablespoon for serving. Transparent cups highlight the "bloody" effect of the sauce. The pudding should be chilled, making it easier to portion.
9

Spread 1–2 tablespoons of thick strawberry sauce on top of the pudding to create "veins" (drag a teaspoon in different directions to resemble bloody streaks). Additionally, you can place two halves of a strawberry or blueberries as "eyes." Sprinkle with toasted almond flakes (30 g) for a crunchy texture.

Ingredients: Strawberry, Almond flakes
Additionally, you can add a teaspoon of whipped cream (30%) for flavor and aesthetic contrast (optional). If you are using food coloring, add it very sparingly.
10

Chilled puddings should be stored in the refrigerator until serving. Serve cold, decorated with "bloody" sauce and Halloween elements (edible 'eyes' made from fruit, crunchy 'bones' made from almonds).

Ingredients: Strawberry, Almond flakes
Serve at room temperature 6–8°C. If preparing in advance, keep the sauce separate and drizzle just before serving — this way the decoration will be most impressive.

Fun Fact

💡

Tapioca comes from the cassava tuber and has been used in the cuisines of Asia and South America for years; in Polish cuisine, it has gained popularity as a gluten-free ingredient in desserts and puddings.

Tips

🍽️ Serving

Serve the pudding in transparent cups to showcase the red sauce. For a flavor contrast, add a teaspoon of whipped cream or natural yogurt. Arrange 'eyes' with raspberries or halved strawberries: place one fruit in the center and drizzle a bit of sauce to make it look like a pupil.

🥡 Storage

Store the pudding in the refrigerator covered with plastic wrap for up to 48 hours. Keep the strawberry sauce separately in an airtight container for up to 3 days. To heat the sauce, use a small saucepan and warm it briefly over low heat; always serve the pudding chilled (do not heat tapioca puddings — they will lose their texture).
