Preparation of ingredients

Wash the fruits and herbs. Scrub the lemon with a brush if you plan to use the peel for decoration. Peel the ginger with a teaspoon (press the edge of the spoon against the skin and scrape) — this is the safest way that minimizes the loss of flesh. Cut the ginger into thin slices (about 2–3 mm) to release its aroma more quickly. If you are using a fresh pomegranate, cut it in half and then extract the seeds into a bowl. Wash the apple and slice it thinly for decoration.

Use a cutting board and a sharp knife for slicing the apple; use a teaspoon for peeling the ginger. The bowl for the pomegranate seeds should be deep to make it easier to collect the juice. A common mistake: slices of ginger that are too thick will release flavor more slowly.

Spice syrup

Pour 200 ml of water into a medium-sized pot. Add slices of ginger, 2 whole cinnamon sticks, and 6 cloves. Set the pot over medium heat and bring to a gentle boil. Reduce the heat to low and simmer on very low heat for 10 minutes — the syrup should gently bubble, not boil vigorously. After 10 minutes, turn off the heat and cover the pot with a lid, letting it sit for 5–10 minutes to allow the spices to steep.

Use a 2–3 liter pot with a thick bottom to prevent the spices from burning. Control the temperature: too vigorous boiling will evaporate the aromas. If the syrup is too strong, you can add more juice/water later.

Strain the spices through a fine sieve into a clean container, reserving the liquid as an aromatic syrup. If you want to sweeten the drink, add 60 g of honey to the hot syrup and stir with a spoon until completely dissolved. Taste the syrup — it should be distinctly spicy, with a gentle sweetness, not overly sharp.

For straining, use a fine sieve or cheesecloth to remove small ginger particles. If you are not adding honey, skip this step. A common mistake: adding honey to cold liquid — it dissolves more difficultly.

Drink

In a large pot, combine 800 ml of apple juice and 200 ml of pomegranate juice. Add the entire aromatic spice syrup (about 200–250 ml, depending on how strong you prepared it). Heat the mixture over low heat — warm for 4–6 minutes until the drink is warm (do not bring to a boil). Grate a thin layer of zest from half a lemon over the pot (only the yellow part), then squeeze the juice from half a lemon into the drink and stir.

Use a 2-liter pot to avoid boiling over. Check the temperature by touching the inside of your wrist — it should feel pleasantly warm, not hot. If you're planning an alcoholic version, add 40 ml of rum only after removing the pot from the heat.

Add 6 g of fresh rosemary to the pot (you can lightly crush the sprig with your hand to release the oils). Heat for another 1–2 minutes to allow the rosemary's aroma to infuse into the drink. After this time, turn off the heat and let the drink sit for 2 minutes — the rosemary will impart its flavor, but it shouldn't overpower the taste.

Do not leave the rosemary in the hot drink for too long — it can make it bitter. If you are concerned about an overly strong aroma, use only half the amount of rosemary.

Serving and decoration

Prepare transparent glasses or cups. Evenly distribute pomegranate seeds (about 30 g per serving) at the bottom of each portion. Place 1-2 thin slices of apple on top of the seeds. Pour hot (not boiling) beverage into the glasses so that some of the seeds remain visible. Squeeze a bit of juice from the remaining half of the lemon into each glass to taste. Optionally, for the alcoholic version, add 10 ml of rum to each serving.

The best are tall, transparent glasses (long drink glasses). Use a spoon to separate the pomegranate seeds to avoid splashing the juice. If the drink is too sour, add a little honey to each serving.

Finishing

Add one small sprig of rosemary to each glass for decoration and aroma. If you want extra sweetness, serve honey on the side so everyone can sweeten the drink to their liking. Serve immediately while the drink is warm.

For decoration, use fresh sprigs of rosemary and – optionally – a thin strip of lemon peel twisted over the drink to release the essential oils. Avoid serving the drink long after preparation — it will lose some of its aroma.
