Ajvar
Description
Ajvar is a Balkan sauce/paste made from roasted red peppers (often with the addition of eggplant), with an intense, deep red color, smooth or slightly grainy texture, and a distinct smoky, sweet-and-sour flavor with hints of garlic and oil. Naturally aromatic and spicy depending on the peppers used, it is a bold addition to many dishes. Ajvar is low in calories, a source of fiber, vitamins A and C, and antioxidants (lycopene, capsanthin); prepared with oil, it provides healthy fats. Thanks to its nutrient content, it supports immunity and eye health, while the presence of fiber aids digestion. It works great as a spread on bread, a dip for vegetables, an accompaniment to grilled meats, an ingredient in sandwiches, sauces, stews, or pasta, and also as a contrasting accent to cheeses. Unopened jars should be stored in a cool, dark place; after opening, keep ajvar in the refrigerator, covered with a thin layer of oil, and use within 1–2 weeks, ensuring clean utensils are used.
