White onion
Description
White onion has a bright white, shiny appearance and a crunchy, juicy flesh with a sharp, clean taste — stronger and spicier than sweet onion, but milder after cooking. It contains few calories, a lot of fiber, vitamin C, B vitamins, as well as sulfur compounds and flavonoids (including quercetin), which have anti-inflammatory, antioxidant properties and support the immune and cardiovascular systems. In the kitchen, white onion works great both raw in salads, salsas, and dips, as well as after brief frying or pickling in tacos, curries, soups, and stir-fries. For storage, it is best kept in a cool, airy, dry place away from potatoes; once cut, it should be stored in an airtight container in the refrigerator and used within a few days.
