Apples (e.g. gray renet, antonovka)
Description
Apples, especially varieties like gray renet or antonovka, have a firm, often hard texture and an intense aroma; the skin can be greenish or yellowish with a blush, and the taste usually balances between tartness and sweetness, making them versatile in the kitchen. They are low in calories, rich in dietary fiber (pectins), vitamin C, and antioxidants, which support digestion, regulate cholesterol levels, and positively impact immunity and the gut microbiome. In the kitchen, they work well both raw, in salads and snacks, and after processing: for baking, compotes, purees, jams, sauces for meats, or cakes; they pair well with cinnamon, nuts, cheese, and pork. Store them in a cool (0–4°C), humid, and shaded place, preferably loose or in a perforated bag, avoiding bruising and contact with ethylene-sensitive vegetables, and regularly check the condition of the fruits.
