Description
Boiled or roasted beets have an intense, earthy aroma with natural sweetness; when boiled, they are soft and juicy, while roasting gives them a slightly caramelized note and a deep burgundy to purple color. They are a rich source of fiber, folic acid, potassium, vitamin C, and manganese, as well as antioxidants like betalains, and natural nitrates that help regulate blood pressure and improve cardiovascular performance; regular consumption supports digestion and has anti-inflammatory effects. In the kitchen, they are suitable for salads, soups (e.g., borscht), purees, dips, sandwiches, and as a side dish for meat dishes or goat cheese, pairing well with balsamic vinegar, lemon, and nuts. After cooling, store in an airtight container in the refrigerator for 3–5 days; whole, unpeeled beets will stay fresh a bit longer, and cut ones can be frozen for about 3 months. Before storing, remove the leaves and allow them to cool completely.
